Episode 2: Apricots and Basil

In this episode, I explore the uncommon combination of basil and apricots. The combo is fresh and sour so it works well to contrast rich dishes. I chose to use it in an apricot basil sauce with pork chops and in baked honeyed apricots.

The sauce goes surprisingly well with pork chops. It tastes almost like a fancy sweet and sour sauce. It adds umami to complement the pork and sourness to contrast. This is the perfect sauce for pork in place of applesauce and it's only a little more work. It goes well with most meats: pork, chicken, duck, etc.

The baked honeyed apricots are a little more of a reach. The dessert is already fresh, so the basil could be overpowering if you don't add with caution. I would recommend serving with vanilla ice cream.
